Most vanilla ice cream recipes...
4 egg yolks
1/2 cup granulated sugar
1 cup whole milk
1 cup heavy cream
2 teaspoons vanilla extract or vanilla bean paste
Mayonnaise recipe
2 egg yolks
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
Kosher salt
1 1/2 cups neutrally flavored oil (vegetable, canola, peanut)
So....just add some sugar, vanilla and heavy cream (now, you can remove the oil) to the mayo recipe and...voila! you have an ice cream recipe!
We had water buffalo milk (higher fat content) boiled and the cream forming on top was skimmed off and used to make Ice cream. Since there was no refrigeration and no ice cream to buy in shops, it was made at home in a hand operated machine using ice cubes and crystal salt. My favorite was when freshly squeezed mango pulp was added to the cream & milk base.

Wonderful scooped into sherbet glasses.....heavenly over angel food cake
ING 2-32 oz containers vanilla yogurt 2-15 oz cans crushed pineapple 15 oz can cream of coconut, cup sugar, cup h/cream.
Mix and freeze as per ice cream freezer. Makes 4 quarts.
