I would love to vacation there, no Muslims, and so much history and good food, beer. Problem is the airfare is prohibitive.
Poland is awesome, the prices are low, you eat like a king for not much money at all.
Krakow definitely is your first choice. Warsaw is a mixed-bag, now personally, I like it a lot, because of all the history, and it’s growing like crazy, with lots of nice restaurants.
Next time I go to the country I have two major places I want to go: The Gdansk-Sopot-Gdynia area and Zakopane.
