Your post 19 didn’t ask about the social/political/economic situation in Ethiopia; it appeared to ask what sophisticated cuisine might exist in Africa.
Some African dishes incorporate spices in ways that rival the Indian cuisine; and the Injera, made from Teff, not only complements the dishes very well, but is a very nutritious, gluten-free bread that is high in iron. It’s a lot better when compared with the squishy, empty-calorie white stuff that most Americans eat, regardless of their ‘race’.
