Your post 19 didn’t ask about the social/political/economic situation in Ethiopia; it appeared to ask what sophisticated cuisine might exist in Africa.
Some African dishes incorporate spices in ways that rival the Indian cuisine; and the Injera, made from Teff, not only complements the dishes very well, but is a very nutritious, gluten-free bread that is high in iron. It’s a lot better when compared with the squishy, empty-calorie white stuff that most Americans eat, regardless of their ‘race’.
I grew up eating both. I still love them. We grew both red and yellow melons plus cantaloupes. Nothing better than a good ripe melon.

I didn’t see anything ‘racist’ about that. The fact is that a lot of low-income Black folks DO eat out of convenience stores and fast-food places.
But they also have a wonderful and diverse tradition of ‘home cooking’.
