San Jose Tofu, Japantown Gem, Closes its Doors After 71 Years
San Jose Mercury News ^ | December 30, 2017 | TATIANA SANCHEZ

When April Yamaichi was a young girl and went shopping with her family in Japantown, she’d dart into the San Jose Tofu Company on Jackson Street to buy a brick of fresh handmade tofu for 25 cents. At one point, she was buying the tofu about every other week from then-owner Takeshi Nozaki, who eventually passed the business down to his son, Chester.

“I’d run over and get tofu from Chester’s dad,” she said. “I just remember his arm was always red from working in the tofu and mixing the soy mixture.

“The texture is unmatched, and the flavor, obviously,” added Yamaichi, a dog trainer. “That soft tofu, you can’t find that kind of tofu anywhere.”

On Saturday morning, Yamaichi, now 58, was first in line to order the beloved tofu for the last time. She arrived from Burlingame at 6 a.m., leading a crowd of more than 80 people who lined up to bid farewell to the city landmark on its last day of business after 71 years and three generations of ownership.

Chester Nozaki said the physical work of lugging 40-pound buckets of soybeans into grinders and vats has taken its toll on him and his wife, Amy. The significant investments needed to upgrade equipment and the recent sale of the building solidified the couple’s decision to finally call it quits.

For many longtime Japanese residents, it was a bitter reminder that historic Japantown’s original businesses — often born on the backs of working-class immigrant families — are slowly disappearing. The Tofo company had acted as a community center of sorts, where residents would go to pass the time and catch up with longtime friends — even to look for jobs.

Nozaki, 61, said he’s given his life to the store — he delivered tofu since he was

Grew up a few blocks away from “Japan Town” in San Jose.

Sorry for these people but California needs to die.

Sorry, as well, for these fine people.

San Jose was once (quite correctly) known as the "Garden City".

Now, it is a festering petri dish, competing for the crime and litter center of the once-golden State.

They need to boil down the workflow to documented / reproducible steps... start to finish.

Then start training franchise owners.

Hold them all to a quality level and the product will live on providing for the family into the future

I guess I have a very uneducated palate as concerns tofu but I sure don’t get using the word “tofu” and “flavor” in the same sentence.

Tofu is a blank canvas. Often it is marinated in spices, citrus, sesame oil & soysauce before being cooked or baked. I am a diehard meat eater, but I make tofu over rice & roasted veggies about once a month. Tofu alone is nothing.

Grilled tofu, covered with olive oil, is delicious.

Thanks for reinforcing my point. Every time I’ve seen tofu featured on a cooking show, it involves the marinating process you describe. I’d give your menu a try since I love roasted veggies.

Japantown? Seriously?

Is that an internment camp? I cant think of a place in the rural South that is anywhere near as segregated and racist. They actually named a whole area, Japantown... Jesus. Does it have walls around it, too?

I think if it was prepared correctly you would at least not find it awful. The day I discovered you could toss diced veggies w/ olive oil, salt & pepper & roast them was a beautiful day! Delicious & easy.

I’ve shared this story often so apologies if you’ve heard it......my meat loving father loved to make his own bread & fudge. He developed the most delicious recipe for tofu burgers. I have attempted them multiple times & they will never compare. I even think a tofu hater would have craved them ; )

Let me know if you ever try tofu!

Lighten up Francis. No different than Little Italy in NY or Chinatown in SF.

Tofu has slightly more flavor than Ralph Nader, so +/- none. It does have high levels of most of the amino acids our bodies need except one. Lysine. It is a big reason Japanese are not fatties or big. For female adults Tofu is great. For kids, I don’t think so. Here is info on short pigs. Sure it applies 100% to the long kind. https://projects.ncsu.edu/project/swine_extension/nutrition/nutritionguide/protein%20and%20amino%20acids/protaa.htm

Here is why the dude does not abide more than one serving of delicious edemame a month. https://www.menshealth.com/nutrition/soys-negative-effects
