A variation of the traditional fruit salad, ambrosia has its own special day, and it is celebrated annually on National Ambrosia Day.

Ambrosia, according to Greek mythology, is the nectar of the gods, endowing strength and immortality to those who eat it.

The term itself can mean something especially delectable to taste or smell.

A simple ambrosia salad from the late 1800s, when the earliest recipes are found, was made with citrus fruit, coconut and sugar. There are those who abhor coconut and would leave it out. Should this occur, a forceful objection would be heard from a true southerner!

Easy variation: box of instant pistachio pudding (or substitute lemon), big can of fruit cocktail, undrained, and a container of Cool Whip. Stir together, let set and chill. Can also add mini-marshmallows. YUM

My MIL made ambrosia every Christmas. I’ve been making a version for my annual Thanksgiving brunch for several years now. Apples coarsely chopped, fresh pineapple chunks, Navel orange wedges (no membrane), and mandarin orange sections. I usually add a little fresh squeezed oj and have toppings on the side like mini marshmallows, shredded coconut, maraschino cherries, and chopped pecans. My family seems to enjoy i.

A little like Watergate Salad.

Pistachio pudding mix (I prefer lemon)
chopped nuts
large can of crushed pineapple
mini marshmallows
Cool Whip.

When I was little, a lady in our church made something like this — “Glorified Rice”.

Not sure how it was made, but it sure was good. Seems it must be like normal ambrosia, but with cooked rice added. I know there were maraschino cherries in it.
