Refer to them as THE STAFF.

Well, “bitch” used to refer primarily to females, but has become a cross-over term recently. How about we call all their wait staff, “Bitch”?
I’m a waitress, we are already “the help”. Eliminating sir or ma’am is just dehumanizing, IMO.
But, no one is forced to work in these freakshows. This policy guarantees (though I could be wrong) they will have servers who are not warm, friendly or gracious. Serving is a bit of theatre; you read the table and act accordingly in order to please the customer. People who put their preferred pronoun desires ahead of fabulous service will be crappy servers.
