Brady doesn't play every snap. He's on the bench for more than half the game (when the Patriots don't have the ball, special teams, etc.). And when you account for the fact that nothing happens for most of the time the clock is running in football, I'd be surprised if Brady even "plays" more than 6 minutes in an average game.
Jagr was averaging 17 minutes of time on ice per game as recently as last season. He's down to 11:00+ this season, but the Flames kept his playing time down early on because he was a late signing and wasn't in training camp.

NFL QB is the single most important position in sports (basketball point guard being next). Every aspect of an NFL offense flows through the QB, a lot of it is pre-snap reads, audibles, checks, etc... Success of an NFL team depends on the QB, pure and simple.
Jagr is great and his longevity and dependability are to be admired, but he isn't nearly as important to his team as an NFL QB is to his team.
