Finished a 16 hour pork butt yesterday at noon.

Wasn’t sure last night if the Yellowstone Caldera was shaking or if it was me...


I love smoking meat.
Pork butt is wonderful, 16 hours though? Seems a lot, but I don’t think you can do wrong with smoking.
I want to do a briquet on the 4th. I am thinking 12 pounds about 14 hours.

I have a kamado style ceramic grill and I smoke at 220.
