The puddings we enjoy as desserts today are not what was commonly known as pudding at ancient dinner tables. Most medieval puddings were meat based and seasoned with herbs and spices. Even sweetened, they were usually served hot. Toward the end of the 18th century, puddings were more likely made from a grains or day old bread with nuts, fruit or meats. These puddings were used to stretch meals for a large family.
The creamy pudding we are more familiar with today is related to the custard, minus the eggs.
Necessity may be the mother of invention, but spouses who are chemists are the inventor. When you are Alfred Bird and your wife is allergic to eggs, that is very true. In 1837, Bird invented an egg-free custard powder using flavored cornstarch.
The earliest packaged pudding in the United States was marketed by My-T-Fine in 1918. This and other puddings like them still required cooking on the stove. The instant version came along in the mid-1940s. On its own or as an ingredient in a larger recipe, pudding can be enjoyed in a variety of flavors.

Instant pudding works just fine spooned over a nice thick layer of banana slices on a premade crust.
Refrigerate until chilled and serve with sprayed on whipped “cream”.

YUM Vanilla pudding on top of some nice, warm, bread pudding full of cinnamon and raisins.

What a coincidence — I’ve just been searching for Why is there currently a Vanilla Shortage. In So. Calif there are 3 Vons (Safeway) stores near me where I used to buy my favorite Haagen-Dazs Vanilla Swiss Almond ice cream. No can find any more!! (Did find at Walgreens btw)
So not believing there is a vanilla shortage I got on internet to find out just where it is grown. Absolutely fascinating. Has to be grown where orchids grow which is near equator and where there are these “special” bees to pollinate. Madagascar and the neighboring island Reunion provide the best and most vanilla beans. Still not dialed into just why the shortage but it was mentioned that the world-wide interest in “natural” ingredients (as opposed to vanilla flavoring — which in itself is fascinating as it comes from “wood”) has made the cost skyrocket.
So, if you know anything about Haagen-Dazs relationship with Vons — let me know. I want my MTV and Haagen Dazs Vanilla Swiss Almond.
INSTANT CREAM PUFF FILLING
Mix 10-oz pkg vanilla instant pudding, cup cold milk; fold in 2 cups cool-whip. Cover/refrigerate.
ASSEMBLY Cap cream puff shells. Pipe in Filling decoratively. Replace cap.
SERVE dusted w/ conf sugar.
Or use cheesecake flavor pudding mix. It has a little more flavor than the white chocolate, but it's not quite as strong and yellow as the vanilla. Good do-ahead. Keeps in plastic container in freezer. Thaw in frige overnight/at least 8 hours before using.
WHIPPED TOPPING
METHOD Elec/mixer on low til combined cup heavy cream, tablespoon dry sugar free instant vanilla pudding mix, tb Liquid Splenda equivalent to 1/4 cup sugar option. Beat on high speed until thick and fluffy.
TO PIPE FANCY: place in qt size zip-lok; add cake decorating tips and coupler inserted into one corner.
Pudding added to a cookie recipe makes big, soft cookies. When added to a cake mix and baked in bread pans, it makes a yellow cake mix taste like pound cake. Or, I have a recipe where you add Pistachio pudding mix to a yellow cake mix and split the batter in 2 pans and top (in the middle) with a mix of crushed pistachios, cinnamon, and sugar and then repeat on the very top. Mmmmm-mmmmm good. Comes out like a fancy tea cake with a vein of cinnamon/nuts/sugar in the middle. It will keep, wrapped, in the refrigerator for up to a month and still be good.

Cream Puffs - yummy
Not so hot on banana pudding. But the vanilla pudding itself is versatile and tasty. An easy Rum Cake made with a cake mix and package of vanilla pudding plus RUM and nuts. A lime pie made with vanilla pudding, lime Jello and cool whip. Not so partial to the instant variety; prefer the cook’n’serve (especially if served alone and not a necessity of any recipe. Butterscotch and lemon are two other favorites. And, of course, there’s always chocolate!
I love, love, love warm vanilla pudding. That looks delicious!!!
