My aunt in El Paso would drive over to NM and get a big supply of Hatch chiles every season. That’s how I first heard of them. Here in SoCal the Sprouts markets bring in truckloads of Hatch chiles and roast them in their parking lots. I’m not sure how many of the locals here know what they are getting.
No. Avocado. Just plain slices of avocado folded up into a burrito which is rather plain until you pour green chile and pork over it. This dish is more Colorado than New Mexico.
That’s a new one on me. But hey, anything is improved by chile.

I’ve ate there, they have good hamburgers. We usually eat at Los Cuates when we go to Cedar Crest.
Los Cuates is OK, but their salsa is too sweet.
