Without other customers getting screwworms at the same time, how could she know it was from Popeyes rather than anywhere else she ate during that period of time (day, week, month?) when she could have been infected?

Without other customers getting screwworms at the same time,Right. Food can be mishandled at any point in the supply chain. Sure, a Popeye's franchise could have messed up. But most contamination occurs after the customer walks out of the store. Unless other Popeye's customers at the same franchise were affected, there's no case.
