Maybe somebody that only like New York original cheesecake or none at all? Wasn’t us, our family likes it all. Just really weird.
For The Crust
1 tsp soft butter(for greasing pan...in my case, glass bowl that fits in round pressure cooker)
1/2 cup finely crushed vanilla wafers(prefer taste over graham cracker)
1 TBL melted butter
For The Filling
16 ounces regular cream cheese
3/4 cup sugar(recipe called for 1/2, but I like it a bit sweeter)
2 eggs
1 TBL squeezed lemon juice
1 TSP lemon zest
1 TSP orange zest(I've substituted with just a bit of OJ)
1 TSP vanilla
1 TBL sour cream
1 TBL cornstarch
Touch of rum
No explosives
(do not over-mix ingredients, BTW)
Tent/cover with foil(keeps the water off it)
Add trivet/2 cups of water/place cheesecake in cooker with prepared foil strip(piece of foil folded several times, ending up 1-2 inches wide)
Cook at high pressure for 15 min./let pressure naturally release(my electric pressure cooker takes about 7 more min. in the cooker)
Let set up over-night.
No muss, no fuss, no loss of limbs.
