Sorry about you losing your wife. Here is what I do for delicious fluffy, easy pancakes. Crack an egg in a mixing bowl, add 1 cup yogurt either vanilla or plain. Whisk together. Then add Bisquick mix a little at a time until you have batter not too thin, not too thick. The yogurt will give the fluffiness and the lightness.
