In a big dry skillet is OK as well. You can get it just warm or toasty brown without the black grill marks.

I was thinking of a tortilla maker, and everyone knows the superior surface for making tortillas is provided by a cinder block turned on it's side, over a fire, in an old Mexican lady's front yard.

I know this because I have lived in California.

But yeah, you are 100% correct: the best tortilla toaster is the metal thing over a gas grill directly over the flame. That's the way my momma raised me, and it's how I'm gonna raise my kids.
