I have heard that grey hounds are very sweet dogs, but I’ve not ever met one up close.
I’ve seen a couple being walked by their owners, and their musculature is just amazing.
Running machines. And, as with pits, they have advocates that take them after their careers are over. I know a guy that walks 3 of them . He’s constantly yelling at them. Flat out on a track is different than walking at heel. Hounds with tiny brains, is all.
Years ago I bought into the “it’s how they’re raised” defense of pit bulls. Then a couple we knew got a pit bull pup and lovingly raised it. All was fine for the first year or so. Then one day the dog was on the couch with the wife and suddenly attacked. Her husband had to shoot the dog to stop the attack. These dogs are too unpredictable.
My brother adopted two retired racers.
As with pit-bulls it's all about selective breeding.
In the case of pit-bulls, aggression is a desired trait. With greyhounds, it's just the opposite. They want dogs with strong prey-drive so they want to chase the rabbit, but they also want dogs with weak aggression to other dogs.
Unlike most other breeds, greyhounds are socialized early in life to be non-aggressive to other dogs and humans. Consequently, they make terrible guard dogs as they are completely non-territorial. Most dogs will bark when someone knocks at the door, or rings the door bell, or if a stranger walks into their house or yard. Greyhounds will simply walk up and want to be petted.

Greyhounds can be trained to walk at heel. As with aggressive pit-bulls do you blame the dog or the owner?
As I say, my brother owned two and they walk at his side with slack leashes. But, he's made it clear to the dogs that he's the leader, not them. It sounds like the guy with 3 lets the dogs run amok.
