I dunno. I have seen a lot of buffalo out this way, and not one of ‘em had wings. Mebbe they get clipped when they’re just calves. (It’s hard enough to keep those ornery critters corralled as it is!)

I have eaten both, ray (sliced) and scallop. The smaller rays are tasty, the big ones are less so and rubbery.

A friend of mine went to the fish market in Tokyo- it’s the largest fish market in the world- you’d think it would have a fishy smell but it doesn’t at all. The Japanese know how to handle fish and how to keep the place clean. He said the market smells fresh.

Good for them; they probably are much more learned about it as it is such a critical part of their diet. I’ll occasionally eat fish, but sushi (or any other uncooked animal, for that matter) is out of the question.

The most tasty seafood I ever ate (imho) were steamed blue crab, in Southern Maryland decades ago, followed closely by fried soft crabs. I ate a lot of fresh seafood in those days. Here, I am far too far from salt water to eat much seafood, but the beef is great.
Everyone has favorites, I suppose--or not.
