I’m having problems with my bread baking. Not sure what I’m doing wrong. I’ve been mixing the dough in the machine then baking it in a pan. That way it makes nice slices for the toaster.
Recently though even letting the dough rest it doesn’t double in size and doesn’t rise as much during baking. Still tastes good but something is wrong.
We buy BIG blocks of yeast and store it in sealed jars but maybe it;s going bad before I use it. Seems to test OK but the bread just doesn’t rise.
I use the yeast from Sam’s Club - dry yeast. I almost always have good results with my bread. I bake mine in the bread machine though. Sometimes it isn’t quite as high. I’m thinking I don’t measure out the liquid as accurately. My ‘go to’ bread is a honey buttermilk white bread. I’m not making it for two weeks. Knees are better. We’ll see if they get bad again. I don’t use bread flour. I use regular flour and add a TBLS vital wheat gluten for each cup. That could be my problem.
We get our yeast from Sam’s Club too and never had a problem until this last batch. It has to be a few months old.
Hmmm...Maybe I should cut down on Gluten. My joints are getting really bad, trouble breathing, basically all the symptoms in that article I posted the pother day.
I can go without beer and other gluten stuff but I need my breads!

There are a lot of gluten free bread recipes on line for bread machines. My son in law makes ALL their bread (because my daughter does have celiacs and they are keeping grandbaby gf as long as possible). I’ve had it and its really good (but denser...it seems more filling). He also makes gf pizza dough. He tried (but gave up) on homemade gf pasta. They buy the boxed stuff and I find it temptramental (must drain at exact moment or gooey fail!)
Did yinz watch DearLeader yesterday? Towards the end I thought his meds were wearing off...but that’s just my take...
Rainy, yucky WX here (blah) and P6 have you noticed an uptick in activity (quite a few 3s and some low 4s) on and around the CASCADIA (Oregon?) So much election “stuff” to read that EQs went unnoticed.
Watched a bit of BO yesterday but Mega Piranha was on SyFy and that was more interesting...!
Really I think he IS on drugs and he is close to losing it. When he crashes it isn’t going to be pretty!

Hmm. All of you talking about bread - my hubby makes a really good potato bread. I’ll ask him to make some this weekend.
I soaked in Epsom salts last night. I think it helped me sleep better.
