Just try cooking a turkey or chicken to the USDA recommended internal temperature. I guarantee you a breast that will be dry in comparison to the average pile of sawdust, and just as inedible.

I find that roasting a turkey in an oven bag with the breast down keeps the white meat tender while meeting the USDA temp limit. However, it doesn’t have classic turkey look when you take it out of the bag.
