If it was just untested butchery, like here in NA, then eating raw pork would be madness.
Don’t ask me how they find ‘pure’ pigs. I just read about this when looking up Mettbrotchen.
If you really want a rare hamburger, go to a Marriott hotel. Mr Marriott loves rare burgers, so every batch of ground beef in a Marriott is tested for e coli before it is brought to the hotel. Buying hamburger from some other place is a firing offense.
my former stepdad’s family ate this stuff at christmas. i love burgers but i never eat/ate raw meat.
well if your brown it you should get good flavor as the maillard reaction is what causes flavor molecules to be created.

Great point, I should have explained that we, for health concerns, prepared this item, and a few others, salad dressings, sauces, etc, at table side to insure freshness..
