It’s been cool here today, and he’s tried to keep it at 275, and it’s pecan.

Oh, man! Like heaven. He just brought it in. He had also packed brown sugar on top of it at the beginning, atop the fat layer. Yowza!

I put the carrots in too soon, and they’re mush. I’ll make another side dish to go with it, although we’ll have the mush BBQ carrots, as well. :-)

On actual checking, the carrots are fine, just a little shrunken, but they’re delicious from the apple juice and pork drippings. They’re not mushy at all.
