Be sure to enjoy your backyard Earth Day BBQ. To help celebrate, here are two recipes, one for Big Kahuna burgers, and the other for the Burger Chef Big Shef and Sauce.
Big Kahuna Burgers
2lbs hamburger
4 tbs Teriyaki marinade (La Choy is good)
6 pineapple slices
6 slices of provolone
1 pkg large buns
Optional:
lettuce, purple onion, tomato,
sliced jalapeno, peperoncini or
banana pepper.
Big Kahuna Secret Sauce
equal parts ketchup and brown sugar
1 tbs Dijon mustard
Simmer all ingredients untill sugar is
melted and fully blended.
Marinate hamburger for at least 20min.
It sounds very sweet, but it is pretty balanced.
BBQ grill both burgers and pineapple slices
then melt cheese over burger before serving.

Burger Chef Big Shef and Sauce
(Big Chef at one point was the second largest hamburger
chain after McDonalds, but they were purchased by General
Mills, that soon figured out they didn’t want to be in the
hamburger business, then sold to Hardees, which wanted the
restaurants, not the brand.)
Ingredients:
2 tbsp Dill relish (not sweet relish)
1 tbsp Dehydrated onions
3/4 cup Salad dressing (Miracle Whip will do)
Louisiana Hot Sauce
Add the dehydrated onions to the dill relish. Let it
sit for a couple of hours for the onions to soak up the
juice from the relish. Then add that mix to the salad
dressing. Add a few drops of hot sauce to bring out the flavor, but not too much.
Insides of bun sections should be lightly sprayed with
coconut oil and toasted. Meat patties should be grilled.
Big Shef assembly (in order) - Bun heel, small slice of
American cheese,salted & peppered small meat patty,
bun center, second meat patty. Big Shef sauce, shredded
lettuce, Bun top.

There is, to this day, an empty, run down Big Chef in my home town. It was a Domino’s pizza for awhile but never lost it’s look as a Big Chef. BC fries rivaled MacD’s.
