I posted this one last year and got several freep mails from people who tried it and loved it, so here it is again.

This pie is VERY rich!

Rich Chocolate Pecan Pie (From the Food Network)

1 1/2 cups pecans 1 cup semisweet chocolate chips 1 unbaked 9-inch pie shell (deep dish is best) 4 eggs, beaten 1/2 cup sugar 1/2 cup light brown sugar 1/2 cup corn syrup 1/2 teaspoon vanilla extract Pinch salt Caramel Sauce, for garnish, recipe follows Confectioners' sugar, for garnish

Preheat the oven to 375 degrees F. Spread the pecan pieces and the chocolate chips evenly on the bottom of the pie shell.

In a mixing bowl, whisk the remaining ingredients together. Pour the filling over the pecans. Bake until the filling sets, 50 to 60 minutes. Remove from the oven and cool for 30 minutes before slicing. Cut into individual servings and serve with a drizzle of Caramel Sauce and sprinkle with confectioners' sugar.

Caramel Sauce:

3/4 cup sugar 2 tablespoons water 1/2 teaspoon fresh lemon juice 1/2 cup heavy cream 2 tablespoons to 1/4 cup whole milk

Combine the sugar, water, and lemon juice in a medium heavy saucepan and cook over medium-high heat, stirring, until the sugar dissolves. Let boil without stirring until the mixture becomes a deep amber color, 2 to 3 minutes, watching closely so it doesn't burn. Add the cream (be careful; it will bubble up), whisk to combine, and remove from the heat.

Add 2 tablespoons of the milk, then add up to 2 more tablespoons, until the desired consistency is reached. Let cool until just warm before serving. (The sauce will thicken as it cools.)

If that isn't sweet enough for you, throw some vanilla ice cream on top too.

Family & Friends Favorite.

Buttermilk Pie

3 3/4 cups sugar
1/2 cup flour
2 sticks melted butter
6 eggs
1 cup buttermilk
1 tsp. vanilla

Sift sugar and flour together. In a separate bowl mix all other ingredients. Slowly add in sugar/flour mixture.

Pour into 9” pie shell and bake at 350 for 45 minutes.

Cranberry Apple Pie

Make the pie as if making an apple pie but alternate layers of cranberries and apples.

Put in a single layer of cranberries and lots of sugar, a layer of apples sprinkled with cinnamon sugar, another layer of each with appropriate sweetening, and either a pie crust top or a Dutch Apple pie topping crumb topping.

Bake as for a regular apple pie.

Apple Squash Casserole

Slice apples 1/4 inch thick.
Slice butternut squash 1/3 inch thick.

Layer apples and squash in buttered casserole dish.

Blend and cook until slightly reduced.
1/2 C butter
3/4 C maple syrup
1/4 C apple juice
1 tsp Cinnamon
1/2 tsp Allspice
1/2 tsp Salt

The recipe I have says to bake covered at 350 for about 50 mins and then baste, but IIRC, I poured the mixture over the apples and squash before baking.

This makes a lot so you may want to cut back on the baste recipe and it shouldn’t take so long to cook, either.

I loved it, but the kids didn’t so I never made it much cause I just couldn’t eat that many leftovers.

I don’t know if anyone has posted this yet. John Kass from the Chicago Tribune has a brined turkey recipe that is fantastic. I convinced my brother to try it and they turkey was perfect. Better than any I have ever had.

How does a person make a Turkey real spicy.. My wife and tried it buy putting Jalapeno Seasoning but couldn’t taste it..

Ingredients

* 1 whole Butternut Squash
* 2 Tablespoons (to 4 Tablespoons) Maple Syrup
* ½ sticks Butter
* 1 dash(es) Salt

Preparation Instructions

Start by slicing one butternut squash clean in half. Scrape out the seed and membranes with a spoon. Place both halves, face down, on a baking sheet and pour a little water into the pan, about a cup. Bake in a 350-degree oven for about 30 minutes or until the squash is fork tender. Remove from the oven.

Cut ½ stick of butter into pieces and throw into a mixing bowl. With a spoon, begin scraping out the flesh of the squash from the skin and place in the bowl on top of the butter. Don’t miss a scrap of it!

Add 2 to 4 tablespoons of pure maple syrup. With a potato masher, mash the squash until the large chunks are gone. Add a dash of salt. Place this mixture into your blender or food processor and give it a whir until it’s pureed.

Cook Time: 5 Minutes
Difficulty: Easy
Servings: 1

Ingredients

* 3 whole Eggs
* 3 slices Cheese (provolone, Swiss, Cheddar, Jack, Etc.)
* 1 cup Picante Sauce
* 1 Tablespoon Butter
* Salt To Taste
* 2 whole Flour Tortillas
* 2 Tablespoons Fresh Cilantro (optional)

Preparation Instructions

Butter the griddle (or a skillet) and crack open the eggs on to it, with a sprinkling of salt. Turn heat to low. Cook the first side until it’s just firm enough to flip over to the other side. Once flipped, throw on some cheese and salsa/picante sauce.

Let the egg sit and cook slowly until the cheese melts – this should take 3 to 4 minutes. If you are using a skillet, you can cover at this point, which will speed up the melting a little bit.

In the meantime, heat up some flour tortillas, roll ‘em up, and put them on the side of each plate.

When the cheese is totally melted, throw two or three eggs on each plate.

Toss on some cilantro, if you so choose.
