It doesnt sound so much as if the teacher is anti-religious as trying to get the students to actually think. With the instructions (He had warned them not to use that word) to write a paper on religion without the word God the student would be forced to actually think of what religion is, without simply regurgitating what they have heard.
One of the most difficult courses I had in school was taught by a professor who detested unbounded verbosity. He always demanded that term paper be limited to 500 words or less. It would have been easier to write a 5,000 word paper. It forced us to actually think. It also eliminated the If you cant blind them with brilliance, baffle them with BS style of writing.
