A lot of the overhead in a restaurant is with the dining room and all that goes with it, including a waitstaff (with high turnover), dishwashers, maitre d's and whatnot.
Just get a first class kitchen, some decent, dependable cooks, a capable shift manager and have a nice website (and mobile phone app) to bring in the orders. Contracting with other restaurants to produce dishes for them is also a nice little niche to get into.
Amazon.com will probably get into the restaurant business soon, delivering cooked food along with 30 minute delivery of other items. Amazon is up-ending the whole American economy. A good thing is they are making country living nicer, like Sears & Roebuck did for early America.
