Democracy protestors were attacked by Triad gang members in an organized effort. Like AntiFa, only more effective and likely backed by the Chinese government.

Whoever attacked the Hong Kong protestors very likely had mainland backing, trying to escalate the situation to the point the mainland can justify moving in with overwhelming force.

China just hired Thug Squads to go around and beat people up ,they disappear just before the Police show up
The beginning of the end started in 1898 when the Brits leased Hong Kong for 99 years.
Organized crime has cast it's lot in with the CCP enforcers.
