I cooked garlic ribs aka St. Louis ribs smothered in garlic on January 9. I used the 3-2-1 method in which after initially smoking the ribs for 3 hours, I wrapped them in foil for another 2 hours, and finally slathered barbecue sauce mixed with butter on them for the final hour.
A great low carb meal for weight loss.
Oh well, filed away for future reference.

When I smoke pork I skip the “Texas crutch” because I don’t want the bark to soften (personal preference).

I watched the whole video, can’t believe it, but I did. Can you do some beef ribs or some lamb for those who are kosher?
The rub recipe I gave you in the video: Garlic Sriracha, Garlic Powder, Garlic Peppercorn, Adobo, and Himalayan Pink salt. Heavy on the Garlic Sriracha and light on the salt.
I might do a video on lamb but only as shish-ke-bab which is the only way I like it. Or at least the way I cook it.
Shish kabob is great, and a good slow cooked beef rib is wonderful. I prefer a garlic based sauce with no tomato, applied after the meat is cooked. Divine!! Cheers...

No, because I don't want to get fried.
Ribs look good but I would not have gone mesquite tho... At least with my smoker it leave a very forward acrid taste. Had much better luck with hickory, apple, cherry or pecan for BBQ. I only grill with mesquite. Keep an eye out for shagbark hickory and wild cherry wood. Absolute best pork smoking woods.

Not a bad recipe. Similar to mine. It makes the lamb sing opera. For the pork fat use smoked hog jowl. Go heavy on the curry (at least 3 tbs) and add 2 tsp turmeric. Malt vinegar, not white. No milk. Reduce the marinade in a pan to a thick consistency for sauce. Grill the skewers on a really hot grill. 2 per adult is a good serving size for hungry people.
Serve with fruit salad and yellow rice:
1 c basmati or jasmine rice
2 c water
1/2 c yellow raisins
1 1/2 tsp turmeric
2 tbs brown sugar
1 bay leaf
Add all except rice to a pot. Bring to a brisk boil. Stir in rice and boil 1 minute. Cover tightly. Turn off heat and give it 25 minutes before fluffing. Recipe scales well.
You will thank me.
I plan to get brisket technique down this coming year. I've wondered when that fat turns to gelatin, if it isn't better for you. I know it's better to ya.
If any of you meat smokers here don't have one of these yet, get one.
That reduced diameter tip is the point at which it reads the temp so you can actually measure the meat between the ribs. There's also fancy ones out there that have multiple probes and a remote unit with temp readouts and alarm(s). You can keep track of the temp in each smoke chamber and each piece of meat. When I get things down pat more, I'll probably get one.
For years, I'd been the only one to eat smoked salmon as my wife would make her 'yucky' face which influenced the kids. I finally got them to try it and they liked it. It felt like a victory until I thought about the price of salmon and having to share it now.
My neighbor grew up dirt poor in WA State and they had a neighbor there who smoked salmon for a living and he would let my neighbor and his brother grab a piece of fish on their way to school everyday so they'd have something to eat for lunch. He really appreciated the salmon I brought him as he hadn't had any since he was a kid.
I've got a fridge I'll be putting in my shop this year and the salmon might have to become my little secret.
