BTW, another reason why I want to reach my weight goal by next month is that if I do, I will have a YUUUUUUUGE announcement to make that will SHOCK the world. But in order to make that announcement I need to reach the goal of dropping 100 pounds.
You gain 6 lbs on Thanksgiving?? Ridiculous.
Most studies say about a pound. Big deal. Your metabolism will take care of that in a week.
So ... is there a recipe for no-carb pecan pie?
It’s not stuffing, it’s dressing, and if it isn’t made with cornbread, it’s not either one.
I think the 6lb figure is the average people gain over “the holidays”, that is between Thanksgiving and New Year.
Personally I’ve been on a not too strict low carb diet for about six months, 10-20 grams of carbs a day. I’ve consistently lost about a pound a week, 30 lbs total so far. Not that hard, but I’ll go ahead and eat some on a holiday, just not the whole month. I had stuffing and pumpkin pie on Thanksgiving. Funny thing is I couldn’t even finish one piece of pie, it just tasted too sweet.
I’ve had two Thanksgiving dinners in the last 48 hours, and I bet I didn’t take in 500 calories, food-wise. My biggest bugaboo is the 2 AM zombie grazing I do. My step-son brought an entire pumpkin pie for dessert this afternoon and I haven’t touched it. But I bet I’ll wake up tomorrow morning, and a third of it will be gone, along with a quart of milk. And pie filling smeared in my whiskers. *chuckle*

This is pretty good.
Low carb marble cheesecake with pecan crust.
May God bless you for your efforts to be healthy.
Turkey, peppers, onions and Caesar salad.

Wow, PJ, congrats, good for you!
Maybe there were some bread crumbs in there, but it was mostly meat.
Always worth the watching.
How do you think the pork rind “stuffing” would be if actually stuffed and cooked in the turkey...with some seasoning thrown in? That’s worth a try!
I did a low carb Thanksgiving - this is the stuffing I made:
https://www.dietdoctor.com/recipes/low-carb-stuffing
It was delicious. Instead of 30 oz ground pork, I used a pound of elk and a pound of Gunnoe’s sausage.
For the bread, I made an almond flour bread - looked awful (I need to work on a more attractive loaf) and tasted delicious. Looks did’t matter when it was in the stuffing:

I made a low carb dessert - no bake pumpkin cheesecake bites:

I started LCHF/Keto in May & I’ve also done some intermittent fasting - lost half the weight (at least) that I wanted to lose. If you haven’t checked out https://www.dietdoctor.com/ , that is where I’m getting info, recipes, motivation & inspiration. You don’t have to be a member to have access to the recipes. I gave away some clothes last week - way too big now.
And bless you for being able to lose weight.
But too often the diet obsessed are of normal weight and dieting is the new puritanism...to feel superior over the rest of us slobs.
My point? There is a time to diet and a time to feast.
That 6 pound average is I believe self-reported through the holiday season.
I think the best defense is a good offense, however, and if you have the positive reinforcement of not going sideways through Thanksgiving, you are more likely to have willpower through the Xmas cookie season, etc.
Congrats on your continued work and thanks for sharing your experience. I have made some pretty good mushroom/sausage stuffings in the past, then added bread croutons to some of it to make bread stuffing for the “normies”, too.
I am curious now to watch your approach.
Oh, wow—great idea, I love pork rinds!
I used to drop 10 lbs before the holidays, so that afterwards, I would weight the same as before.
Zero=carb as a lifestyle is as ignorant as gluten-free.
I wish all those luck doing this as part of a regimen to lose weight, but carbs are not the enemy. An apt metaphor: A pencil is as deadly as a firearm, but a choice determines its use.
Gluten is another story entirely, but confirmation bias prevents logic from sinking in for those so-engaged.
