Boy does it! Luckily, and unluckily, I live in a small city overrun with Mexicans. The upside is there is perfectly delicious, authentic Mexican food on almost every corner. Haven’t been in a chain in probably 30 years.
My wife is from Mexico — I get my Mexican food there.
The first thing Americans need to know about real Mexican food is you DON’T drown it in sauce. Instead, you marinade the meat well, char it nicely and serve it that way. The best way is to munch a Serrano or pop a Del Monte chile every 3rd bite or so.
The second thing: REAL LARD!
