If you don’t eat a lot of processed foods, these kinds of concerns are greatly diminished.

Perhaps true, but given the inability of our press to understand even the most simple science, methinks I smell a bit of “the sky is falling” syndrome here.

I’ll eliminate phosphates, gluten, lactose, nuts, fats, and too many carbohydrates.

Plus, it’s a good bet that the sodium phosphate comes from China, if not the whole damned food product.

To remove an additive that increases food shelf live may not be the best of all possible ideas.
I rather eat an additive that kills me slowly than get food poisoning that kills me quickly.
Best to choose your own ingredients and cook your own food but it's not always possible to do that every day.

You will die without phosphates. Phosphates are an essential nutrient. Vitamin D + Calcium + Phosphates = Bone; but also, Vitamin D + Calcium + Phosphates = most of the hormones and system control chemicals in you blood stream.
Like everything, the key word is moderation.

The big source is actually phosphoric acid, found in absolutely massive quantities in certain soda.

All that nonsense you learned about carbonation dissolving bones is ridiculous. It’s not the soda; you can hold your breath for about 20 seconds and have a greater effect. It’s that many popular sodas — including most colas — have phosphoric acid.

And it doesn’t dissolve your bones. It’s that nature never found a good way of monitoring your calcium levels in your blood. So it measures another substance which commonly coexists with Calcium in food: Phosphorus. Artificially increasing phosphorus in your blood makes your body think it’s got very high levels of Calcium... so you pee out all your calcium, leaving your bones deprived.

See, Calcium’s main purpose is as electrolytes in your cells, each of which function like a little, tiny battery. Too much or too little is very bad. So nature found a way of keeping a reserve of Calcium: bones. Only later did nature find that bones were also very useful structurally.

One of the biggest sources of phosphorus in the diet is the phosphoric acid in Coke and Pepsi. Most soft drinks use citric acid to keep yhr massive amounts of sugar and corn sweetener in solution. Coke and Pepsi use phosphoric acid. The weirdest part is that they use it in the diet versions which have no sugar.

Interestingly enough tri-sodium phosphate (TSP) is what has been removed from dish-washing soap and laundry detergent, as the EPA has been wiggin out about the amounts in the water from waste treatment plants.

Watch out for that most deadly of all food additives: DHMO.

DHMO is invariably found in human cancer cells.
