Homemade Turkey Soup

You can make the most of even the smallest pieces of leftover meat on your holiday turkey. I simmer the bones to get the rich flavor, then easily remove any meat that remains. I add rice, vegetables and cream soup for a hearty soup that's tasty and economical

I made turkey soup out of the turkey and veggie leftovers, yummm.

Hope you all remembered to boil the carcass for broth to store in the freezer.

After stripping off all the meat he could, my husband put the carcass outside on top of the garbage can and forgot about it. The next morning he went to put it in the can properly, and it was as bare as though it was bleached in the desert sun. Our local birds had Christmas, too. (Don’t try this if you have rats in your neighborhood.)

Only use the little ones,the young ones, the older and larger ones are tough and taste bitter. Use a little honey barbeque sauce, too. They taste almost Southern.
