Olio Nuovo will be finito by winters end, so be sure to look for a bottle soon.
For those who deeply love olive oil, the coldest part of the year is a joyous time. Why? Because these months mark olio nuovo season. The excitement arises from what olio nuovo means: another olive harvest, another year of fresh olive oil. But the buzz also comes from the olio nuovo itself.
Olio nuovo, also known as olio novello, is the years very first olive oil, newly pressed and fresh as can be. It stays on the shelves of better grocery stores and specialty shops through the first months of the new year. A bottle of it can transform your cooking. It also delivers a higher level of polyphenols, or the antioxidants found in plants that may reduce your risk of heart disease and cancer, than any other type of extra virgin olive oil. Translation? It's one of the healthiest bottles you can buy.
Olio nuovo, unlike most other olive oils, doesnt go through aging to clear olive sediment. In skipping this step, a younger, fresher olive oil results. It also keeps those olive particles alive in the oil. Olio nuovo isnt racked or filteredcommon steps undertaken to clear olive sediment for a bright golden bottlemeaning that tiny flavor-packed particles suspend in green-tinted olio nuovo, like specks of dust in a sunbeam.
These solids give olio nuovo a bright but brief life. Olio nuovo stays pristine for about three to four monthsNovember through February or soafter harvest date, which is usually listed on bottles. But these fine pulpy solids, together with uncommon freshness, give olio nuovo its magic.

Dang, now I wanna go inventory my spice and oil cabinet. *chuckle* I’ll remember that - thanks for the tip. I’ve been getting into trying to grow dwarf fruit/bean trees indoors like Key lime, Meyer lemon, clementines. I’ve seen where you can also buy dwarf Arabica coffee trees and olive trees, to grow your own for personal consumption. I’ve got the citrus, and so far, so good for their indoor health. I wonder if the others would produce suitable food-grade fruit, as well..........
Are they going to make 72 bottles of it for sale to muslims?
I just went and looked. My bottle is Bertoli from Italy and it expires in November. Better start using it up.

Throw that crap out!
Buy a decent bottle.
They don’t carry Genco here.
Genco is marginal, at best.
Look for the COOC seal.
Don’t tell anyone.
Mine is carlini and carries the seal. It tastes good. Ive had other brands that were nasty, bitter and didnt taste a thing like olive oil should. I never buy oliveoil from walltworld as I’ve gotten some nasty ones there, too, and paid a lot for it.

If you insist on buying an imported Italian oil, buy this one:
https://www.amazon.com/dp/B000YQ2FG2?tag=adtinet-20&linkCode=ogi&th=1
It comes in 1 liter tins too.
I’ve had it and it compares favorably with CA oils.
Can you make it last all year if you refrigerate it? Honest question. I’m coming late to healthier living.
EVOO is good for 18 months if it is not exposed to light or air.
The darker the bottle, the better. A metallic container is better. Once opened, 3 months max.
Fresher is better. It does not age well.

Only place I will buy from. Their garlic infused, jalapeño infused olive oils and infused balsamic vinegars are to die for. Did a tour and they are top notch! They have novo, too! I am due to place an order for more garlic infused, so I think Ill order some of that, too!
This local Italian place serves olive oil with bread so I was wanting to try some at home. Thanks for the link, I will see what they have.
Does that mean it should NOT be refrigerated?
OK for the Fridge, but hard to use when cold.
YES!!! I look for California grown only...harder and harder to find.
Roger that. Warm it up, one pint at a time.
