Well, even if it’s not a touchscreen but it is still software based, then it’s still vulnerable to hacking. However, I believe that the part of the article that I skimmed said they wanted to go back to “mechanical” controls. No way to hack mechanical control unless there is an external or interlocking override.

If the controls are somehow linked to the outside world; then yes; it may be possible.
But if the system is self contained; then actual physical access to the device must be obtained to do any 'hacking'.
