Hah! I just want to make sure that I get the crusty cracklins from the fat-cap, first. Fat IS flavor.

*Cletus D. Yokel sticks a fork into the “decoy” piece of meat. Texokie, Brisket Burgler, only snagged a little of that crunchy fat crust. She also got just a little of the part that is nice and falling apart. He grins. Wait til she gets a nice serving in another day of what’s in the back of the smocker!*

Yep. This piece is nice and perfectly done.

*Cletus puts the “decoy” on a platter and covers it with the dishrag for the purpose. He takes a nice big bite of the cracklin’ fat. “Oh yum,” he thinks as he rolls his eyes. He has another small partially oven-cooked piece, laden with fat, that will serve as the next decoy while the REAL goods are cooking in the back. Everything is going so nicely. The fire is just right, temp is just right. *

*Two new Qitties he’s never seen before start doing figure 8s around his knees. He has mercy and pinches off the least bit of the decoy for each of them. The effect is immediate. He can tell they are now his Friends for Life.*

*The other FReeQs and guests are over in the Pool area breaking in the other cooking area with making nachos and pizza bites. There might even be a margarita or two in evidence over there. He’s glad they are having fun - and leaving his cooking area ALONE! He closes the lid to the smocker with a satisfied ‘thump’ and goes back to the Qarage to finish playing the “Color My World” on the rinky tink upright. He puts the cooked decoy into the Qarage freezer for a later meal. But first he snags another bite, rolls his eyes and says out loud*
