I’m guessing that the Still Pot would have been located above that ‘fire pit’

The archeologist would have found remnants of grains from the mash in and around the pit.

All you get in aged whiskey is the taste of charred wood.

(FWIW, only the Scots spell it "whisky"; there is no such thing as "Scotch whiskey.")

Whiskey doesn’t get any better after about 20 years. It may even get worse.

The moment spirits are bottled, they quit aging. If it wasn't good when it was bottled, it won't ever be good.

Exactly so. In order to ‘age’ it must be in burnt oak barrels. The longer it ages, the less bitter the taste and the smoother the drink. Time is money, so it costs a wee bit more.....................
