An Great Dane is not a high energy breed which means that the Great Dane probably behaved much better on the plane then the fifty pound whatever you want to stick her with.

Is she too stupid to take cues from a 50 pound dog?

She would have been matched with a dog that fit her needs.

The dog behaved properly. The lady behaved properly. The human male is the stupid violent one here so why the hating on the dog and the lady?

Does her being deaf in public offend you?

No but being stupid in public does. What can a one-hundred plus pound dog do to help a deaf person that a fifty pound dog can't? That's not a service animal. That's a pet and the person that owns it is abusing the system at everyone elses expense. Look for an end to so called service animal exemptions for all handicapped because of stupid snowflakes abuse. The dog's owner wants attention and she is getting it. I love dogs but I also love sanity. Taking Great Danes and peacocks on planes is not sane.
