When I made spaghetti sauce I would simmer marrow bones in it for a few hours, then take them out, remove the marrow, and blend it in with the sauce. Very sweet and rich and really added to the mellowness of the sauce. I tried not to think about what it is - that’s a bit of a turn off.
It was a fight amongst us siblings and Dad as to who would get the marrow. It was the tastiest part.
And all these years I thought my mom and aunts were crazy. Might have to give this a try at some point

No, but I’ve had four Bone Marrow Biopsy’s over the past decade or so. Thanks to Leukemia I’m a giver, what can I say?
Used to do it with chicken drumsticks. As a side note, the larger parrots do it — somehow instinctively they know that inside those hard bones (easy for them to crack) is really good stuff that tastes good and is good for them. I wonder how they ever figured it out.
Dad used to go to a local farm to buy what would today be called ‘country ham’, which is quite different from the mass-marketed, processed hams you find in grocery stores today.
There would be several slices from the center that Mom would fry up for a weekend breakfast with eggs & biscuits. The marrow was always intact in the bone, and I found it to be very tasty!
Do all of those all the time,,, you need to try some goat oysters :) they have a good creamy flavor ,,,;)

I love marrow. Lamb steaks are not safe around me and my wife will not watch me eating the marrow. I have to warn her when I’m going to “sluck” it out of the bones so she can leave.

I’ll wait until the marrow becomes tallow, which is made into Jello powders.
When we get a beef butchered I have most of the roasts and steaks left "Bone in" for that very reason. The other bones get roasted, cracked and cooked down into a very rich bone broth.
Marrow. It does a body good.
We fed the baby a few spoonfuls a day and yes, the baby rapidly stopped being sick all the time.

One of our favorite French restaurants serves the bone in beef with a tiny spoon, to enjoy the marrow with. Delicious.
