Have turkeys on my land in Salado, Texas which is North of Austin about 50 miles. I much enjoy their presence. The coveys march across my land like an army eating bugs. During hunting season we take 2 or 3. We strictly abide by the Texas Game and Wildlife rules. They taste absolutely delicious and have no resemblance to a farm raised turkey when it comes to taste.

It does not get any better than a wild turkey stew. A little salt and pepper, coumino, and the pepper of your choice and it is perfect. I prefer just a bit of jalapeno and a lot of mild Hatch green chilies.

If You ever Deep Fry a Wild Bird ONLY Time Cook at 1 (one) Minute per Pound @ 365f , Store Bird 3 Minuets @ pound.

Hormones not in Wild Bird but fed and pumped full of in the Store Bird.

I learned the hard way, ruined a good Fresh Bird...

"...Have turkeys on my land in Salado..."

My in laws used to own a pizza place in Salado.

I think it was called Slice of Salado. I like the area, but it is getting full of Austin types.
