So pretty much like any fight - fists, guns, knives, whatever. Hollywood makes it look like one has all the time in the world during a fight.

Not exactly like any fight; swordsmanship is a martial art. The better your training, the better you will do. But there is less drama in a sword fight than appears in Star Wars (unless you're the one with the sword). All that choreographed spinning and swinging of blades just doesn't happen.
