I absolutely LOVE raw potato. Give me a couple of freshly dug Red Pontiac or Yukon Gold potatoes and a salt shaker and I’m in heaven. Even russets, but I am not fond of the texture of their skin.
I too try to make myself have a few bites of raw potato when I’m peeling or cutting. I don’t love it, but I do understand how good it is for my gut and I do have a bit of a root vegetable craving anyway.
