Their normal diet is mostly protein and their metabolism is optimized for it.

I would think that their traditional, healthy diet is probably higher in fat than protein. But your point about carbs is right on. Take any healthy population: if they commence a diet high in carbohydrates, many of them will become sick and fat. Carbs are behind the epidemic of chronic diseases.

Japanesee at plenty of rice, french eat plenty of bread, Italians eat plenty of pasta. All are known to be long lived, and not particularly fat.

Perhaps you mean sugar.
