Oh my gosh I love hush puppies but have not had any for many many years. My grandmother would cook all of those things which I remember fondly.

I don’t know about Oklahoma (where Pickens is from) or where his ex-wife is from (they divorced in 2012, she hired this chef in 2014, bringing his name into this is phony scandal because he has no ties to it, she was married to another tycoon in 2000), anyway in Texas EVERYONE eats some cornbread, barbecue, and fried chicken, even MILLIONAIRES.

Not crazy about turnip greens. Kale is so-so. I love most fresh vegetables grown in the area where I was raised in VA. If not for my love of a good, rare steak I would be a vegetarian.

I draw the line with green peas. Spent many a night locking horns with my parents. My stubbornness is unmatched. :-) I held out & won each time.

I am a pepper person. I even put it on my cantaloupe and in my tomato juice. I use very little salt.

Getting hungry just thinking about it

The Army hospital at which I work has a yearly African American heritage observance.

I used to work at a vocational-technical school in Oklahoma City that had a culinary program at one campus. The program director was a black woman with a history in restaurant management who would lead the students in devising the Black History menu every February. If you wanted to eat there that day, you had to get in a reservation for one of three different seatings they would do. It wasn't "black" food, it was just good country food like you listed plus sweet potato pie. You could order a take-home pie if you got lucky enough to be drawn.

Let me tell you my story about green peas. I thought I did not like them until the 2nd or 3rd grade. My teacher talked me into just trying a spoon full. I did and loved them. I grew up on a MS farm and grew most of our food and some fruit. We grew sweet potatoes, too but not very much. One of my dad's relatives was a sp farmer so we bought them from him by the bushel baskets. One of my mom's uncles grew fruit so we bought fruit from him. Now, they are all gone and I only have my precious memories. The wife of a cousin died the last day of 2016. Her funeral is tomorrow. We will really miss her since she was a wonderful Christian lady who did my mom's genealogy. She touched many lives. I told someone on here a few days before her death that we are not guaranteed tomorrow. She had a massive heart attack at home. Very, very unexpected. We just never know. God bless.

I remember when we called it “soul food” and it was quite acceptable to cook it, like it, eat it. If I had a Chef (fat chance) I think it would be perfectly acceptable to ask for soul food, just as it would be acceptable to ask for Mexican food, Chinese food, Italian food, etc. Leslie Uggams put out a heck of a cookbook years back, and to my great regret I lost it during one of my moves. The macaroni and cheese recipe she had in there was out of this world. That black Chef is just looking to make a fast buck instead of soul food.

Kenyon Grist Mill in RI have been making ground corn used in cornbread since 1696. Lots of people raised chickens in RI. New Englanders battered and fried chicken just like they battered and fried fish. The spices later added were contributions made by Southerners.

Madeleine was living most of the time in Cali and Nevada.
T is for Texas -and he was spending most of his time there.
