I also like the suggestion about slathering roofing tar all over the part of the signs a person would have to touch to steal them.
But me, I’d probably go with a high-er tech approach, such as conspicuously attaching an electrical wire to each side of the sign and burying it for a few feet. Even though it would be attached to nothing, most people are so ignorant they wouldn’t take the chance.
