Parihuela: The Most DELICIOUS Soup You Will Ever Eat

Today I went to a Peruvian restaurant and had my absolute favorite soup of all time. Parihuela. You can see the soup I had in the pic below. It is composed of shrimp, clams, mussels, prawn, crab, calamari, octopus, and special chilis. The liquid is a reddish color. The bowl I had was very large and had enough seafood in it to make a complete meal.

A local pizza joint near me offered a Peruvian pizza that was outstanding. Some kind of chili pepper was added to the sauce which provided the unique flavor.

They went belly up after the 2008 crash.

La Costanera in Montara Beach, CA is a good one. Worth the trip.

Their ceviche is wonderful.

My daughter and I had paella in Barcelona after she finished her studies. Nothing like,it in the world! The waiters serve the monstrous,cast iron skillets that must be 22 inches across.

Lima is a short run down US 25 from where I was born...

(There was no I 75 in those days and it’s hard to find Dixie Highway on maps now.. Last time I spent any time in Lima, Fair Radio was still around.. ;-)

So does Parihuela

Ingredients

1/2 cup vegetable oil
4 cloves of garlic, minced
2 medium onions, diced
1 tin chopped tomatoes (400g)
2 tablespoons soy sauce

2 tablespoons of aji rocoto (red chilli paste)
1 tablespoon of aji panca (smoky chilli paste)
3 tablespoons of aji amarillo paste (yellow chilli paste)

1 teaspoon of dried oregano
1 bay leaf
250 ml white wine
8 small fillets of white fish
2.5l fish stock
16 mussels
500g prawns
500g squid, cut into rings
200g scallops
2 tablespoons of chopped coriander
2 tablespoons of chopped parsley
2 spring onions, chopped
Salt and pepper to taste

Paella? It’s a Spanish dish. It’s a moulage of fish, an meat with rice. Very tasty. Oh it’s a orgiastic feast for the senses!

That looks very similar to a Northern Italian soup called Ligurian Seafood Stew (some also call it Cioppino). I had it in a restaurant in Savannah Georgia. Came in a BIG pot with the lobster claw sticking out! :-)
