I ordered a buffalo burger once. Meh. I’ll stick to beef, pork and chicken.
My butcher sells ground bison.....when I grill [sear on high 500*] at home...it’s served with with lots of seasoned salt, and sauteed mushrooms and onions.
A good hearty bun that doesn’t fall apart, is critical.
