The pasture raised beef I buy is actually cheaper then the beef in the supermarket.

Many, if not most, cattle in this country spend time on the range or the pasture, and then at a certain point they’re moved to a feed lot for fattening.
I know grass-fed is a fad, but having experienced both, in my opinion grain fed is superior. Fat lends flavor.
But like I said, most cattle are a little of both.
Maybe in your observation of the overgrown pasture the cow has to find a way to get to the bottom greens and are working from the top down. Most people don’t graze cows in 4 foot tall grass. they wont stick their face in the ground of thick overgrowth and get their eyes poked and scratched.
Hence you still have to feed in the spring until the grass starts to develop seeds.

When they refer to “grain” they are talking about CORN
fats do not lend flavor, beef lends flavor. Fat neutralizes the beef flavor so the steaks will take up more flavor of the marinades, which are not beef flavored IMHO.
Try eating an unseasoned pork rind. No flavor there. Might as well eat a rice cake.
TLDR
I disagree with the idea of grease being considered a condiment. I think of it as one of the basic food groups right alongside salt, preservatives and caffeine.
I have to wonder how many of the proponents of "feed the cow only grass stems" on this thread have actually seen a cow on anything but TV much less raised them.
Grass fed is definitely better. Let’s not fool ourselves.
But let me tell you a story. When I was a guest in Mongolia I was offered at the meal a piece of meat that was 50% fat. As an American, what did I do? I cut off the fat and ate the meat. My host was slightly offended.
On reflection I realized I had been honored with that fat. I did not realize how RARE a fat animal was in that region and most areas of the world and HISTORY.
It gave new meaning to stories of fat in the BIBLE. The killing of the fatted calf, the offering of fat to God but His sharing of the smell with us. We live in a very unusual time where something of tremendous value in history is treated with disdain.
I got you. They are the same thing. But a lot of times they separate out the plant part and for cows digestion to work right they really should have everything, not just the grain. But yes it is wrong for people to think one is “natural” and the other isn’t.
I actually never really heard people complaining so much about grain versus grass. The distinction between being feed corn (high sugar foodstuff) and grass is a big deal, because sugar really messes up the gi tract in cows and that’s where you get a lot of bad bacterial growth that needs antibiotics to control.

There is too much corn in the food chain — corn is relatively high in omega 6 FA, and low in omega 3 FA, and grass is the reverse. We’re supposed to have a balance of 3 and 6.
