What are you gonna be grilling today?
I may be cooking some burgers.
What is the best way to cook a spotted owl on the grill??
I'll start with a spotted owl recipe.
Moo Goo Owl Gai Pan
3/4-1 lb Fresh if possible spotted owl 1 cup fresh button mushrooms 1/2 cup canned bamboo shoots, sliced 1/2 cup canned water chestnuts, sliced 1 slice ginger, finely chopped 1 clove garlic, minced
SAUCE 1 cup chicken stock 1-2 tablespoon oyster sauce 1/2 teaspoon sugar 1 tablespoon cornstarch
SEASONINGS 2 tablespoons soy sauce 1 tablespoon rice wine or dry sherry 1/8 teaspoon sesame oil 1 tablespoon cornstarch oil, for stir-frying
4-6 servings 1 hour 5 minutes 45 mins prep
Do you remember a Rush “ad” a few years back for The Roadkill Cafe?
Easy-peasy, darn near idiot proof: chicken quarters, seasoned *only* with salt and pepper (as heavy or light as you wish) and grill over (in order of best results) fruit-wood or hardwood coals, lump charcoal, propane or natural gas, or (if you have no other choice) charcoal briquettes.
We have tried all manner of seasonings, rubs and marinades, but when it comes to chicken, you simply can’t go wrong with plain old salt & pepper.
However, "Spatula City" is pretty ingrained...
