what passes for Mexican in the US isn’t really any of them,

Amen.

I had to go to an isolated community high up in NM to find 'real' mexican food. And I think most of that was actually native american.

Most poverty foods like mexican, italian, and asian are a wide range and can't be always tied down.

In New Mexico, I tend to find good Mexican dishes in restaurants that advertise “Mexican and American food.”

Right here in So. AZ. They don’t know how to make Mexican food in Phoenix.
