When I want _coffee_, I don’t immediately think of going to a place that specializes in _hamburgers_ or _donuts_ and charges nearly as much for a cup, with nowhere near the variations. I don’t want to get it in an environment that’s pushing sodas and burgers and other grossness, and serving it in an environment unsuitable for my frame of mind.
SBX at least acknowledges there are many different kinds of beans, roasts, and desirable contaminants*; there’s nuances of making it that differentiate a clerk pulling a pot from a cup vs what makes a “barista”. If you’re aware of those differences and can articulate preferences therein, and want to buy & enjoy it within an environment filled with like-minded people, you’re their intended customers - a very profitable base to serve.
“Would you like fries with that?” is a good sign you won’t find an artful cup there.
(* - tall, dark, black. Methinks if you need other stuff in it, it’s not worth drinking.)
