this looks like hocum. they only chose two specific emulsifiers which i don’t see in any of the stuff that i buy. At first i thot they were going after lecithin which is made from eggs now that they say they are good for us.
They are now testing other emulsifiers. It would probably be a bit chaotic to conduct a study so wide ranging if all were tested at once. The most common source of lecithin in processed foods is soy, not eggs. Soy is not that good for us.

Soy lecithin is available as dissolved in soy oil, or as a granular material when the oil is removed. You will find that lecithin is a great food substance, naturally occurring, and supplied also as a refined concentrated additive.
One day Montsanto will not be able to pay off every research scientist that is peer reviewing papers, and soy will be outed. Most of the commercial lecithin produced... is from soy.
